Easy Brownies

Easy Brownies

Ingredients:

1) Self - raising flour 1 cup
2) Cocoa powder 3/4 cup
3) Brown sugar 1 1/2 cup
3) Baking powder 1/2 tsp
4) Salt 1/2 tsp
5)Vanilla essence 1/2 tbsp
6) Butter 250 g (melted)
7) Eggs 4
8) Nuts for topping (optional)


Directions:

1) Pre -heat oven 180 degree Celsius, and line baking tray with baking paper.
2) Measure all the dry ingredient and set aside in a bowl.
3) In a large mixing bowl combine Melted butter, Brown sugar and Vanilla essence, then gradually add the eggs one at a time.
4) once fully combined add the flour mixture into the egg mixture and mix, until a thick and pasty batter is formed.
5) Pout the batter into the baking tray, bake for 20 to 30 minutes. or till the surface cracks.
 (note wait for it to cool completely before attempting to move it out of the pan or cut)

5) Pout the batter into the baking tray, bake for 20 to 30 minutes. or till the surface cracks.

Tofu Chocolate Pudding (Topped with caramelized walnuts)

Tofu Chocolate Pudding (Topped with caramelized walnuts)


I love tofu and I also love chocolate, both are enjoyable when eaten alone. However, putting them together actually makes a great dessert and it is easy to makes too. Well it  can be classified as a "Healthy" dessert I guess. So without further a do the recipe is as follows. (FYI : this recipe has a strong tofu taste so if u want a milder taste use half the packet of tofu!!)


Ingredients:


1) Tofu 1 packet (300g)
2) Chocolate chips 1 cup
3) Honey 1 - 2 tbsp
3) Pinch of salt
4) Vanilla essence (optional)

Topping:

5) Any Nuts (for topping)
6) White sugar 1/2 cup
7) Butter 2 tbsp
8) Water 1 tbsp


Makes 4 ~ 6 cups (depends on the size pf the cups)

Directions:

For Pudding:

1) Using a heat proof bowl place chocolates chips and melt using the microwave on high heat for 2 ~ 5 min. set aside.(note: microwave timing may vary depending on the power of the microwave)
2) Remove tofu from packaging, drain all the water and then proceed to puree the tofu in a blender or food processor.
3) Combine Tofu puree, melted chocolate, honey and a pinch of salt. mix well till well in-cooperated.
4) Pour into serving cups, refrigerant at least 2 hours for it to set. 


For topping:

1) Use a sauce pan, put gas to low heat.
2) Add the Sugar and water, stir continuously till sugar dissolve.
3) Add nuts and butter, stir continuously till nuts are well coated.
4) Place the nuts on baking paper spread out to let it cool.

I do not have a food processor, I only have a blender, so use the ones with the blades facing downwards or flat to puree the tofu.



2) Remove tofu from packaging, drain all the water and then proceed to puree the tofu in a blender or food processor. ( It should look like melted whited chocolate)


3) Combine Tofu puree, melted chocolate, honey and a pinch of salt. mix well till well in-cooperated.


4) Pour into serving cups, refrigerant at least 2 hours for it to set.

Cocoa Flavoured Pancakes

Cocoa Flavored Pancakes


So it is a Saturday and it is a time where we usually love to have a nice breakfast to enjoy, and for me a nice breakfast would be to have nice and fluffy pancakes this once similar  to Macdonalds. I mean who does not like pancakes, it can be both a dessert and a breakfast!! But sadly there are no Macdonald near my house and I do not want to call for home delivery cause it can be pricey, so I decided to make my own!

I always wondered how Macdonalds get their pancake  to be so fluffy and somehow have a cakey texture to it, and all the recipes that I looked for online either said to use plain flour or all purpose flour but the texture of the pancakes never turned out the way I wanted it to. So I decided to try to use Cake flour and it worked! Finally a pancake with the texture I always wanted, now I can make it whenever I want as it can make good desserts too!! I hope you will enjoy it too.. :)

Ingredients:

1) Cake flour 1 cup
2) Baking powder 1 tsp
3) Cocoa Powder 1/2 cup (Omit if desire plain)
4) Salt 1/2 tsp
5) Sugar 2 tbsp
6) Milk 1 cup
7) Butter or margarine 2 tbsp (Melted)
8) Egg 1 (Separated) 

Makes 8 - 10 pancakes (Depends on the size)


Direction:

1. In a large mixing bowl put all the dry ingredients together, Cake flour, Baking powder, Cocoa powder, Sugar and Salt. Whisk slightly.
2. In another bowl combine Milk, melted Butter or Margarine and Egg yolk. lightly mix the mixture.
3. Pour the milk mixture into the dry ingredients and mix vigorously and quickly till well combined,  do not over mix. (lumpy mixture is fine)
5. Whisk the Egg whites till soft peaks form, then fold it into the pancake batter.
6. Heat non-stick pan with low heat, when pan is hot lightly oil the pan with 1/2 tsp of butter or margarine before proceeding to make the pancakes.
7.  Refer to picture for making pancakes.

1. Pancake batter should look something like this  after combining all the ingredients together, lumpy is fine.

 

2. Place the pancake batter in the pan like in the first picture (any size you want, but bear in mind the bigger the pancake the harder to flip), cook the pancake till the edges harden (1-2 min) then flip the pancake and cook for another ( 1-2 min). Repeat till you are out of batter!!


3. Enjoy the pancakes plain on its own or if you have a sweet tooth you can make this pancake into a dessert by adding a huge scoop of vanilla ice cream with chocolate sauce!! ( I wanted to do that but sadly my home does not have any ice cream. ) :(

Deep Fried Chocolate Stuffed Mochi


I have been a fan of Mochi ever since I ate one,  be it plain or stuffed or even drizzled with some sweet sauce. Hence, I just love the soft and chewy texture and I will always be overjoyed if I ever see some Mochi on sale. So being a big fan of Mochi I had to learn how to make it myself, and to my surprise it was quite simple and I managed to get it with a few tries. So yeah, you can try them too if you like:)

Ingredients:

1) Sweet rice flour (glutinous rice flout) 3/4 cup
2) Corn starch 1/2 tbsp
3) Baking powder 1 tsp
4) 1/3 cup water
4) Chocolate chips
Oil for frying


Directions:

1) In a mixing bowl combine Sweet rice flour, Corn starch and Baking powder into a bowl. make a quick whisk to combine all the flours.
2) Gradually add the water into the flour mixture, knead slowly until you get a dough.
3) Roll into about 3 cm ball size, followed by making an indent in the middle to put chocolate chips into the balls.
4) When done making, Heat the oil before proceeding to deep fry. fry till golden brown

Egg-less Chocolate cookies

Why egg-less you might wonder, well to be honest I sometimes forget to incorporate the egg into the mixture, but the product still comes out nice and so "poof" I just created an egg - less product by accident. These cookies are easy to make and is suitable for beginner as the ingredient an be substitute with any variation of combinations such as raisins, nuts, chocolate rice, rainbow rice or white/dark/milk chocolates.

Egg-less Chocolate Cookies

Ingredients:

1. Chocolate compound 200g (dark/milk/white) - your preference
2. Butter 250 g
3. Caster sugar 150 g
4. Plain Flour 400 g
5. Baking powder 1 tsp
6. Vanilla essence 1 tsp (optional)

Additional if desired:
7. Walnuts/Almond any nuts (optional)

Directions:

1) line the Aluminium baking tray (which can fit into your oven) with baking paper, and pre-heat the oven to 180 Degree Celsius.
2) Chop up the chocolate compound into bite size pieces. (skip this step if you are using chocolate chips)  
3) In a large mixing bowl cream the Butter, Sugar and vanilla essence with hand mixer or mixer, till slightly pale or sugar have dissolved. (make sure to scarp the sides to ensure even mixture)
4) Add Plain flour and Baking powder into the butter mixture, use spatula to fold in clockwise direction to form into dough.
5) Add Chocolate and Nuts(optional) into the dough, knead till in-cooperated.
6) Shape cookies into 3 cm ball sizes, place then on baking tray at least 8 cm apart from each another.
7) Bake cookies for 15 min ~ 20 min or when edges turn golden brown.

Makes about 30 ~ 40 (depend on the size)

This is the finished product on the lefts is the white chocolate cookies and the right is the dark chocolate cookies. I hope you will enjoy making and eating the cookies!

1) line the baking tray with baking paper, like in the picture can use a bigger tray provided if you oven is big. Also pre - heat your oven to 180 degree Celsius use the middle rack of the oven.


2) Chop the chocolate compound to bite size, preferably cube shape no need to be perfect but bite size will do. 

  

3) In a large mixing bowl use a hand mixer/mixer Cream the Butter, Sugar and vanilla extract till slightly pale or sugar have dissolved. (remember to scrap the side regularly to ensure even mixing)
               
4) Add Plain flour and Baking powder into the butter mixture, use spatula to fold in clockwise direction to form into dough. ( The dough should not be sticking to the bowl)

 

5) Add Chocolate or any desired dry ingredients into the dough, knead till in-cooperated. ( I did two batches left is white chocolate and right is dark chocolate)

 

6) Shape cookies into 3 cm ball sizes, place then on baking tray at least 8 cm apart from each another.

 

7)  Bake cookies for 15 min ~ 20 min or when edges turn golden brown with a slight crack lines in the middle. ( wait for it to cool before attempting to move the cookies!!)

So a little about myself I am 24 this year, local Singaporean Chinese, I have been baking since the age of 13 years old and have relatively positive comments on my baked product from both my family and friends. Well they did urge me to start my business selling baked good, but I did not have the courage to do so as I find that the competition in the market is really tough and not feasible to me.

So yeah this is why I decided to try to start from this blog as a platform to see how the responses is before deciding to venture further. I will be posting my very own recipes regularly here so do check them out. @(^_^)@
